Tasting Tea with a Covered Bowl
A chaou, often called a gaiwan, combines a lid, bowl and saucer. It lets you see and smell the leaves while tasting successive brews.
Why go
This method is especially useful when comparing tea before buying or learning how a leaf changes in water. The plain glazed or porcelain bowl keeps the focus on the tea. Watch how the lid controls the pour, then notice the leaf and aroma between infusions.
Useful to know
Look at the opened leaves and smell the bowl between brews when comparing teas.
Expect a lid, bowl and saucer rather than a teapot; tasting cups may be added.
