Why go
Steamed bread-style dumplings are sliced to sit beside a sauced main; potato dumplings may also be filled with smoked meat. Braised cabbage or spinach can complete that combination. Boiled potatoes with caraway, mashed potatoes and rice offer other common pairings, so the side changes the character of an otherwise similar dish.
The full story
Knedlíky are central to many Czech mains, but the word covers more than one form. Steamed bread-style dumplings are cut into slices and placed beside sauce, where they work differently from a separate bread roll. Potato dumplings can be smaller or filled with smoked meat, making the latter much closer to a substantial dish than a token side. Braised cabbage or spinach may complete that plate. Potatoes also appear boiled, mashed or prepared in other familiar ways; caraway is one common seasoning in the older repertoire. Rice and noodles appear on menus too, so dumplings are a choice, not an automatic accompaniment. Read the whole dish name before adding a side. If the main comes with a rich sauce, sliced dumplings make practical sense; if the potato dumplings are filled, an extra starch may be unnecessary.
Useful to know
- When choosing a sauced main, look for bread or potato dumplings if you want the classic combination.
- A filled potato dumpling can be substantial, so read the whole dish description before ordering extra sides.
