From the regional World / Stories

Japanese Cuisine

Use Japanese cuisine as a regional lens: rice, seafood, soy products and seasonal ingredients recur, but dishes and dining styles change markedly from Hokkaidō to Okinawa.

Japanese Cuisine

Why go

Food is a practical way to understand place in Japan. Local fish, crops and cooking methods shape regional specialties, while rice, miso, tofu, seaweed and pickles explain the building blocks that appear across everyday meals when choosing what to eat in each region.

The full story

Japanese cuisine is often organized around a bowl of rice and several accompanying dishes. The word gohan can mean both cooked rice and a meal, which points to rice’s central place in the table. Soybeans appear as tofu, miso and soy sauce, while seafood and seaweed are important ingredients in many regions. Pickles often provide another contrast in a set meal. The wider pattern is regional rather than uniform. Hokkaidō is associated with seafood and crab, while Osaka is known for dishes such as okonomiyaki and takoyaki. Local specialties emerge from the crops and fish available to each area, so a meal away from Tokyo can be a direct introduction to a region. Look for the relationship between the main ingredient and its setting. A bowl of noodles, a grilled fish dish or a set meal becomes more useful when you ask what local water, coast, farm or season has put on the plate.
